Easy Cheesy Broccoli Casserole
1 10 oz. package frozen chopped broccoli, thawed and drained
3 eggs, beaten
1 12 oz. carton cottage cheese
3 cups shredded sharp cheddar cheese
1 tsp. salt
1/4 cup butter, cut into small pieces
3 T all purpose flour
Grease 9x9 casserole dish. Mix all ingredients and pour into prepared casserole dish. Bake uncovered at 325 degrees for 1 hour. Cut into squares. Enjoy!

Walk down West 28th Street between 6th and 7th Avenues and you are right in the middle of the flower market. The sidewalks on both sides of the street are full of billowing fragrance and you're greeted with flowers in every color of the spectrum; bulbs, topiaries, orchids, grasses and cut flowers you could only imagine. Poppy Seed Chicken
2 or more cups cooked, diced chicken
2 cans condensed cream of chicken or celery soup
8 oz sour cream
1 small, diced onion
1 tsp. of lemon juice
1 stack Ritz Crackers
1 stick butter
Mix 1st five ingredients and place in a 13x9 inch casserole pan. Mix one stack Ritz crackers and 1 stick melted butter. Sprinkle on chicken mixture. Sprinkle poppy seed on top and bake uncovered at 350 degrees for 30 to 40 minutes, or until bubbly.

Honey Cinnamon Vinaigrette
1/3 cup cider vinegar
1/3 cup honey
1 tsp. ground cinnamon
1 tsp. dry mustard (or use 1 Tbsp. of regular mustard)
1/2 tsp. salt
1/4 cup canola oil
Whisk first 5 ingredients together then add oil in a steady stream whisking constantly. Or you can put all of the ingredients in a jar and SHAKE. If you use dry mustard dissolve it in the vinegar first or it clumps up.

Sour Cream Cake
1 cup butter (2 sticks)
3 cups sugar
6 eggs separated
3 cups plain flour
1 tsp. salt
1/4 tsp. baking soda
1 tsp. baking powder
2 tsp. vanilla
1 cup sour cream
Beat egg whites until stiff, add 1/2 cup sugar and set aside. Cream butter and add remaining sugar. Add egg yolks and mix. Sift dry ingredients and add alternately to butter and sugar mixture with vanilla (first) and sour cream. Begin and end with flour. Fold in egg whites and pour into 2 loaf pans or into 1 tube pan ( greased with Pam).
Bake 1 hour and 15 minutes at 350 degrees.
