Here's the Dirt...Chicken Tetrazzini

This chicken dish is a favorite around our house. Hope you like it too!

Chicken Tetrazzini

4-6 chicken breasts, cooked and diced
1/2 lb thin spaghetti
1/2 lb. sharp cheddar cheese, grated
6 pieces celery chopped
2 onions chopped
1 can cream of chicken or celery soup
3 tbsp. Worcestershire
salt and pepper
1 pint chicken stock

Cook celery and onions in butter until tender. Add stock and seasonings. Add soup slowly and simmer 15 minutes. Add cheese and turn off heat. Boil spaghetti, drain and add to stock mixture. Add chicken and put in long casserole dish. Sprinkle with pecans and bake at 350 degrees for about 20-30 minutes until heated. Enjoy!

Charleston, South Carolina. What a wonderful city! This was my first trip to Charleston. We had a great time walking around the historic district and seeing all incredible homes and buildings. The cobblestone streets made you feel like you were walking in the same footsteps as someone from 100 years ago.

Here's the Dirt...Billy Coile's Barbecue Sauce

This is a recipe passed down from my Great Uncle Billy Coile. Billy was quite the character. He lived in Winterville, Georgia. His wit and one liners were priceless. Billy create this barbecue sauce. Though he was in a wheelchair for many years, it never limited his ability to always be the life of a party.
Billy Coile's Barbecue Sauce
1 stick margarine, bring to boil and simmer. Add one cup vinegar and return to boil. Reduce heat and simmer for a few minutes. Salt to taste. Add black pepper until you're ashamed, then add more! Baste chicken pieces and cook slowly on grill, continue basting until done.

Here's the Dirt...Ann's Salmon Croquettes

Ann's Salmon Croquettes are part of a long standing southern tradition in our family. This menu sounds like a strange combination for dinner, but trust me it works.

Menu:
Ann's Salmon Croquettes
Homemade Angel Biscuits (See previous post)
Cheese Grits
Baked Beans

Ann's Salmon Croquettes

1 can pink salmon, drained (remove bones and skin)
1 tbsp. vinegar
2 eggs
1/2 package of saltine cracker crumbs

Mix together, form patties and cook in hot oil.

Here's the Dirt...Cow in a Blanket

Everybody knows what a "pig in a blanket" is. One night I was trying to figure out what to fix for dinner and came up with this recipe. It's easy and kids love it!

Cow in a Blanket

1 can Crescent Rolls
1/2 lb. ground meat cooked with chopped onions and 1/4 bell pepper
Add a little spaghetti sauce and simmer til done.

Spread meat mixture on separated Crescent rolls. Add a slice of cheddar cheese, close roll around meat and add a slice of cheddar cheese on top. Bake about 15 minutes at 350 degrees. Enjoy!

We created these mum and moss flower balls to hang in a tree as a backdrop for an outdoor wedding. This idea can be incorporated for any season of the year depending on what your color scheme is and what flowers you are using. For summer use apple green spider mums and daisies. The green moss balls help keep the natural look.
We continued the use of the flower balls throughout the wedding and reception.
It really was neat!

I love Oak Leaf Hydrangeas this time of year. I made this arrangement at The Clay Pot today consisting of Oak Leaf Hydrangeas, Stock, Judy Roses, Salal and Huckleberry. I love the billowy drape of the hydrangeas. To keep the natural look of the arrangement, I used a low 10" willow basket for my container.

Here's the Dirt...from The Clay Pot...Phalaenopsis Orchids

White Phalaenopsis Orchids are one of my favorite plants. They are extremely long lasting plants with blooms lasting 2-4 months. The simplistic look of orchids adds an elegant touch to any location. People usually don't realize that orchids are very easy to take care of and need minimal watering. Orchids are one of my favorite items to send out from The Clay Pot.

Here's the Dirt...Parmesan-Herb Pita Chips

These chips make a great snack for a party or go great with a bowl of soup. I love the flavor of the chips. Make sure you eat some before you put them out, because they will go quickly!

Parmesan-Herb Pita Chips

1/3 cup olive oil
4 tsp. Dried Italian Seasoning
3 6" Pita Rounds
1/2 cup shredded parmesan cheese

Combine olive oil and Italian seasoning. Split each pita bread into 2 rounds. Cut each round into 8 wedges. Place wedges on a lightly greased baking sheet. Brush rough side of each wedge with oil mixture. Sprinkle wedges with shredded parmesan cheese. Bake at 325 degrees for 10 minutes. Transfer to wire rack to cool. Yield: 4 Dozen. Enjoy!

Here's the Dirt...Grandmother Jumper's Angel Biscuits with Ann's Black Pepper Honey and Ham

This is a combination using my Grandmother Jumper's Angel Biscuits recipe and my Mother's Black Pepper Honey and Ham recipe. I've served this at my open house and it is
always a crowd favorite. Everyone loves ham and biscuits...

If you are short on time you can use one 24oz. package of frozen mini biscuits. (24 Biscuits), otherwise make them from scratch...

Grandmother Jumper's Angel Biscuits

1 package dry yeast
2 tbsp. lukewarm water
5 cups plain flour
1 tsp. soda
3 tsp. baking powder
4 tbsp. sugar
1 tsp. salt
1 cup shortening
2 cups buttermilk

Dissolve yeast in water, sift flour and dry ingredients. Cut in shortening. Add yeast to buttermilk and mix with dry ingredients. Knead gently about 7 times. Roll out and cut about 1 1/2" circle. Bake 15 minutes at 350 degrees.

Black Pepper Honey

1/2 cup honey
2 tsp. coarsely groud pepper
2 drops hot sauce

You will need one 8oz. package of thin-sliced ham.

Spread Black Pepper Honey in biscuit. Fill biscuit evenly with ham. Serve and Enjoy!

Jane Gray, Stray Dog Designs
It all began with the love of a dog. When Billy Pritchard and Jane Gray first welcomed that sweet, scrawny stray into their lives, they had no way of knowing that she would lead them to found their own company.
That was 1994. In the years since La Princessa captured their hearts, Billy and Jane have grown and matured from a struggling pair of newlyweds selling lamps out of a pickup truck, into the founding partners of Stray Dog Designs, internationally reconized designer/manufacturer of lamps and home accessories.
I remember those days when Jane and Billy would stop by my shop with items in the back of their truck. It was always a treat to see what Jane had just designed. I've watched them grow their company over the years to the success it is today. Jane and Billy are one of a kind. Their kindness and love for what they do is an inspiration to everyone.
I will be sharing with you some of the wonderful designs from Stray Dog Designs.

Here's the Dirt..Broccoli Salad

This is my Mother's recipe. It is a great side salad for a summer party.

Broccoli Salad

Wash and chop broccoli
1 small onion, chopper
1 cup raisins

Dressing

3/4 cup mayonnaise
1-2 Tbsp. sugar and vinegar

Mix dressing and add to salad. Top with bacon crumbs, sliced almonds, or sunflower seeds. Enjoy!

Here's the Dirt...Ella Sue's Corn Casserole

This recipe was given to me by Ella Sue Bunch, who sadly passed away this year. A wonderful lady who will always be missed.

Ella Sue's Corn Casserole

1 can cream style corn
1 can regular corn
1 Jiffy corn bread mix
1/2 onion, diced
1/2 green pepper, diced
1 stick butter, melted

Mix and bake for 35 minutes at 350 degrees. Enjoy!

Here's the Dirt...from The Clay Pot...Mason Jars With Fresh Flowers


I love the simple look of summer flowers in Mason Jars. These flowers from The Clay Pot were for an casual outdoor event.

Here's the Dirt...Hot Arizona Dip

This recipe is easy and great for parties.

Hot Arizona Dip

2 8oz. blocks of cream cheese
4 Tbsp. milk
1 5oz. jar dried beef
1/3 cup finely chopped green pepper
1 8oz. carton sour cream
4 Tbsp. minced onion
1 cup chopped pecans

Combine all ingredients except pecans mixing by hand until blended. Place in a shallow oven proof dish. Top with pecans. Bake at 350 degrees for 20 minutes until bubbly and hot, but not completely boiling. Serve warm with crackers.

Can be doubled or halved. Can be made ahead and frozen. Enjoy!
